There is not much better than homemade pot roast on a cold fall or winter day, except cutting the cooking time by 3 to 4 hours using an Instant Pot! There is no compromising flavor in this Instant Pot – Pot Roast; it’s succulent, fall-apart beef is infused with aromatics and deep, savory flavors. Keys to success with Instant Pot Pot Roast

  • Pressure cook the beef & broth first, then add the carrots and potatoes at the end to avoid overly mushy vegetables.
  • Use Chuck Roast with as much marbling (flecks of fat within the meat muscle) as you can find. This tends to be more flavorful and tender than a rump, sirloin or round roasts, which take longer to get tender.
  • Salt the roast early, also known as Dry Brining. This is going to give you the absolute best result as the salt is pulled into the roast to flavor it and protect it from squeezing out all the moisture. Dry brining is simply sprinkling salt over the beef and giving the salt enough time to permeate the meat, so try to salt it 30 minutes in advance or better yet overnight.

How Long to Cook Instant Pot Pot Roast

Pressure cook the beef and flavorful broth on high pressure for 1 hr and 15 minutes. Quick release the pressure cooker, add the carrots & potatoes, then pressure cook for another 15 minutes. The internal temperature of the beef should reach about 212ºF, this is when the connective tissues release and you get that fall apart succulent beef.

Time Tips for Roasted Baby Potatoes

A good pot roast takes 4 to 5 hours to cook in the oven, so this method vastly cuts down the time. The carrots & potatoes can be chopped while the beef is cooking to cut prep time down too!

Adjustments for Kids

I recommend finely dicing the onion, celery and garlic so they disappear into the dish. This also has the added benefit of thickening the sauce. If they’re not big on the beef to start with, it’s ok if they just eat the carrots & potato, they’re still getting the beef flavor & broth!

Ingredients

Units Scale

Beef prep

  • 3 lbs chuck roast
  • 1 1/2 tsp salt

Vegetables

  • 2 large onions
  • 10 cloves garlic
  • 5 ribs celery
  • 1 1/2 lbs baby potatoes (washed and cut in half)
  • 8 carrots

Herbs & spices

  • 2 whole bay leaves
  • 3 sprigs fresh thyme (or 2 tsp of dried thyme)
  • 2 sprigs fresh rosemary, roughly chopped (or 2 tsp of dried rosemary)
  • 2 tbsp fresh parsley (roughly chopped)
  • 2 tbsp fresh chives (chopped)
  • 1/4 teaspoon black pepper

Extra flavor & thickener

  • 2 c beef bone broth or beef stock
  • 1 c. dry red wine (can substitute 2 Tbsp balsamic vinegar & beef stock if needed)
  • 2 Tbsp Worchester sauce
  • 1 Tbsp balsamic vinegar
  • 3 Tbsp tomato paste
  • 2 Tbsp flour
  • 2 Tbsp butter

Instructions

Beef Prep

  1. Sprinkle the salt onto the beef chuck roast and set aside. This can be done the night before to allow the salt to soak into the center of the roast, making it really flavorful.

Vegetable Prep

  1. Finely dice the onion, celery and garlic. When chopped real small it will disappear and help thicken the broth.
  2. Chop the carrots into 2 inch pieces. Cut the baby potatoes in half.

Sear the roast

  1. Set the Instant Pot to sauté high option and let the bottom heat up very hot; it will give off a scary sizzle when you splash water in it.
  2. Add 1 tbsp of butter or oil to the bottom and swirl to fully coat the bottom to create a barrier between your food and the pot.
  3. Add the beef and let it sear on the first side for 2-3 minutes until nice brown color develops.
  4. Scrap and lift it out and let the bottom of the pan heat again and add another tbsp of butter if needed. Then sear the other side of the roast for 2-3 minutes.
  5. The sides of the pot roast can also be seared if they’re thick enough. Once done searing, take out of the instant pot and set aside.

Brown the onions

  1. Add another tbsp of butter to coat the bottom of the pan. Add the onions and stir occasionally. Cook until they caramelize and turn brown.

Create the flavorful broth

  1. Add the celery & garlic in and cook for 2 more minutes.
  2. Add the flour, thyme, rosemary, parlsey, black pepper, tomato paste, balsamic vinegar and Worchester sauce. Scrape the bottom to remove any stuck bits and cook for 2 minutes.
  3. Add the wine slowly. Stir and bring to a boil. Letting it boil to reduce for 5 minutes.
  4. Add the beef stock or bone broth and stir to combine.

Pressure cook the beef

  1. Add the seared roast back into the pot with the flavorful broth.
  2. High pressure cook the beef for 1 hr & 15 minutes. Quick release the pressure.

Pressure cook the carrots & potatoes

  1. Add the carrots & potatoes to the pot and pressure cook for another 15 minutes. They do not need to be completely covered by the broth.
  2. Quick release the pressure again.

Salt to taste & serve

  1. Taste the broth and salt to taste by adding about 1/2 a tsp of salt at a time. Once you taste the salt and the flavors really pop, it’s ready.
  2. Serve with the chopped fresh chives sprinkled on top.

Variations

  • Mushrooms and other root vegetables such as turnips and rutabaga can be added for additional delicious bites.
  • For gluten free, omit the flour; if finely dicing the onion you’ll still get a nice thick broth.
  • This can also be made with chunks of stew meat or short ribs instead of the large roast!
